- 1 1/2 cups granulated sugar
- 3/4 cup apple cider vinegar

- Fresh mint leaves (optional, for garnish)
Instructions
- Peel, core, and dice the pineapple into small chunks. Set aside.
- In a saucepan, combine sugar, apple cider vinegar, red pepper flakes, and ground ginger.
- Bring to a boil over medium heat, stirring until sugar dissolves.
- Add the diced pineapple. Reduce heat to low and simmer for 10 minutes.
- Remove from heat and let cool for 30 minutes. Add fresh mint leaves if using.
- Spoon into sterilized jars, seal tightly, and refrigerate for at least 24 hours before serving.
