Description

This Pineapple Jalapeño Pepper Jelly is a delicious balance of sweet and spicy, perfect for enhancing any meal!


Ingredients

  • 2 cups pineapple, crushed
  • 1 cup jalapeños, finely chopped
  • 1/4 cup lime juice
  • 1 package powdered pectin
  • 5 cups granulated sugar
  • 1/2 teaspoon salt

Instructions

  1. In a large pot, combine the crushed pineapple, jalapeños, and lime juice. Bring to a boil over medium heat.
  2. Add the powdered pectin and stir well. Return to a rapid boil.
  3. Add the granulated sugar and salt, stirring constantly. Bring back to a boil for 1-2 minutes until sugar is dissolved.
  4. Remove from heat and pour into sterilized jars. Seal and process in a boiling water bath for 10 minutes.
