  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 lime (optional)
  • For the glaze (optional):
  • ¼ cup reserved pineapple juice
  • ½ cup powdered sugar
  • 1 tablespoon lime juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8×8-inch or 9-inch round cake pan with parchment paper.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate large bowl, whisk together the pineapple juice, vegetable oil, eggs, vanilla extract, and lime zest (if using).
  4. Gradually fold the dry ingredients into the wet ingredients in three additions, stirring gently each time until just combined.
  5. Pour the batter into the prepared pan and smooth the top with a spatula.
  6. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze, whisk together pineapple juice, powdered sugar, and lime juice until smooth. Drizzle over the cooled cake and let set before slicing.

Notes

  • Use canned 100% pineapple juice if fresh is unavailable.
  • For extra tropical flavor, fold in ½ cup shredded coconut or chopped pineapple.
  • Cake can be stored at room temperature for up to 3 days or frozen for up to 2 months.
  • Substitute lemon juice if lime isn’t available for the glaze.
