- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup shredded coconut
- 1 tsp vanilla extract
- 2 eggs
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup almond extract
- 1 cup powdered sugar
- 1/2 cup pink food coloring
- 1 cup dried coconut flakes
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×9 inch baking pan.
- In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
- Add in the eggs and vanilla extract, mixing well after each addition.
- In a separate bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Stir in the shredded coconut and almond extract.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let the bars cool completely before icing.
- For the icing, mix powdered sugar with pink food coloring until desired consistency is reached.
- Spread the icing over the cooled bars and sprinkle with dried coconut flakes.
Notes
