Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup shredded coconut
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup almond extract
  • 1 cup powdered sugar
  • 1/2 cup pink food coloring
  • 1 cup dried coconut flakes

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×9 inch baking pan.
  2. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add in the eggs and vanilla extract, mixing well after each addition.
  4. In a separate bowl, combine the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Stir in the shredded coconut and almond extract.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  9. Let the bars cool completely before icing.
  10. For the icing, mix powdered sugar with pink food coloring until desired consistency is reached.
  11. Spread the icing over the cooled bars and sprinkle with dried coconut flakes.
