Ingredients

  • 1 pound ground beef
  • 1 cup pepperoni slices
  • 2 cups shredded mozzarella cheese
  • 1 cup enchilada sauce
  • 8 large tortillas
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and cook the ground beef until browned.
  3. Stir in the pepperoni, Italian seasoning, garlic powder, and onion powder; cook for another 5 minutes.
  4. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the beef-pepperoni mixture and some mozzarella, then roll them up and place them seam-side down in the dish.
  6. Top with remaining enchilada sauce and sprinkle with remaining mozzarella cheese.
  7. Bake for 25 minutes or until the cheese is bubbly and golden.

Notes

  • Let the enchiladas cool for a few minutes before serving.
  • Serve with sour cream and chopped green onions for added flavor.
