Ingredients

- 1 pound ground beef
- 1 cup pepperoni slices
- 2 cups shredded mozzarella cheese
- 1 cup enchilada sauce
- 8 large tortillas
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and cook the ground beef until browned.
- Stir in the pepperoni, Italian seasoning, garlic powder, and onion powder; cook for another 5 minutes.
- Spread a small amount of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the beef-pepperoni mixture and some mozzarella, then roll them up and place them seam-side down in the dish.
- Top with remaining enchilada sauce and sprinkle with remaining mozzarella cheese.
- Bake for 25 minutes or until the cheese is bubbly and golden.
Notes
- Let the enchiladas cool for a few minutes before serving.
- Serve with sour cream and chopped green onions for added flavor.
