- 1 cup pumpkin puree
- 8 oz cream cheese, softened
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 tsp pumpkin spice
- 1 cup crushed graham crackers
- 1/4 cup melted butter
Instructions
- In a medium bowl, beat the cream cheese until smooth.
- Add the pumpkin puree, powdered sugar, vanilla extract, and pumpkin spice to the cream cheese and mix until well combined.
- In another bowl, whip the heavy cream until stiff peaks form.
- Fold the whipped cream into the pumpkin mixture gently.
- In a separate bowl, combine the crushed graham crackers with melted butter and mix well.
- In serving glasses, layer the graham cracker mixture, pumpkin cheesecake mixture, and repeat until glasses are full.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- For extra flavor, consider adding a pinch of salt to the cream cheese mixture.
