Instructions

  2. In a large bowl, mix pumpkin puree, brown sugar, granulated sugar, and butter until smooth.
  3. Beat in eggs and vanilla extract.
  4. In a separate bowl, combine flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Stir in rolled oats and nuts if using.
  7. Scoop tablespoon-sized amounts of dough onto a baking sheet.
