- 1 cup pumpkin puree
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup rolled oats
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix pumpkin puree, brown sugar, granulated sugar, and butter until smooth.
- Beat in eggs and vanilla extract.
- In a separate bowl, combine flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Stir in rolled oats and nuts if using.
- Scoop tablespoon-sized amounts of dough onto a baking sheet.
- Bake for 12-15 minutes or until golden brown.
- Let cool before serving.
Notes
- For an extra cinnamon kick, sprinkle some cinnamon sugar on top before baking.
