Pumpkin lasagna is a delightful twist on traditional lasagna, combining creamy pumpkin with layers of cheese and pasta for a cozy meal.

- 2 cups canned pumpkin puree
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup grated Parmesan cheese
- 9 lasagna noodles
- 2 cups spinach, fresh
- 1 teaspoon garlic powder
- 1 teaspoon nutmeg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- In a large bowl, mix the pumpkin puree, ricotta cheese, garlic powder, nutmeg, salt, and pepper.
- In a greased 9×13 inch baking dish, layer 1/3 of the noodles, followed by 1/2 of the pumpkin mixture, 1/2 of the spinach, and 1/3 of the mozzarella.
- Repeat the layers until all ingredients are used, finishing with a layer of noodles topped with remaining mozzarella and Parmesan cheese.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
- Allow to cool for 10 minutes before serving.
Notes
- For extra flavor, add herbs such as basil or thyme.
- Can be made ahead and baked when ready to serve.
