Description

Pumpkin lasagna is a delightful twist on traditional lasagna, combining creamy pumpkin with layers of cheese and pasta for a cozy meal.


Ingredients

  • 2 cups canned pumpkin puree
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup grated Parmesan cheese
  • 9 lasagna noodles
  • 2 cups spinach, fresh
  • 1 teaspoon garlic powder
  • 1 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a large bowl, mix the pumpkin puree, ricotta cheese, garlic powder, nutmeg, salt, and pepper.
  4. In a greased 9×13 inch baking dish, layer 1/3 of the noodles, followed by 1/2 of the pumpkin mixture, 1/2 of the spinach, and 1/3 of the mozzarella.
  5. Repeat the layers until all ingredients are used, finishing with a layer of noodles topped with remaining mozzarella and Parmesan cheese.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
  7. Allow to cool for 10 minutes before serving.

Notes

  • For extra flavor, add herbs such as basil or thyme.
  • Can be made ahead and baked when ready to serve.
