			- 1 cup pumpkin puree
 - 1/2 cup brown sugar
 - 1/2 cup granulated sugar
 - 1/2 cup unsalted butter, softened
 - 1 cup rolled oats
 - 1 1/2 cups all-purpose flour
 - 1 teaspoon baking soda
 - 1 teaspoon cinnamon
 - 1/2 teaspoon nutmeg
 - 1/2 teaspoon salt
 - 1 teaspoon vanilla extract
 
Instructions
- Preheat your oven to 350°F (175°C).
 - In a large bowl, mix together the pumpkin puree, brown sugar, granulated sugar, and softened butter until well combined.
 - Add the rolled oats, flour, baking soda, cinnamon, nutmeg, and salt to the mixture. Stir until a dough forms.
 - Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
 - Bake for 10-12 minutes, or until the edges are golden.
 - Allow to cool before serving.
 
Notes
- For a richer flavor, add chocolate chips or nuts to the dough.
 - These cookies can be made ahead of time and frozen for future enjoyment.
