 - 3/4 cup brown sugar
 - 1/2 cup granulated sugar
 - 1/2 cup butter, softened
 - 1 teaspoon baking soda
 - 1 teaspoon ground cinnamon
 - 1/2 teaspoon nutmeg
 - 1/2 teaspoon salt
 - 1 teaspoon vanilla extract
 
Instructions
- Preheat your oven to 350°F (175°C).
 - In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
 - Add the pumpkin puree and vanilla extract, mixing until well combined.
 - In a separate bowl, whisk together the flour, oats, baking soda, cinnamon, nutmeg, and salt.
 - Gradually add the dry ingredients to the wet mixture, stirring until just combined.
 - Drop rounded tablespoons of dough onto prepared baking sheets.
 - Bake for 10-12 minutes or until the edges are golden.
 - Let the cookies cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
