Delicious and easy to make, these Pumpkin Oatmeal Cookies are the perfect treat for fall.

			- 1 cup pumpkin puree
 - 1 cup rolled oats
 - 1/2 cup brown sugar
 - 1/4 cup granulated sugar
 - 1/2 cup butter, softened
 - 1 large egg
 - 1 teaspoon vanilla extract
 - 1 teaspoon baking soda
 - 1 teaspoon cinnamon
 - 1/2 teaspoon nutmeg
 - 1/2 teaspoon salt
 - 1 cup chocolate chips
 
Instructions
- Preheat the oven to 350°F (175°C).
 - In a large bowl, cream together the butter and sugars until smooth.
 - Beat in the egg, vanilla, and pumpkin puree.
 - In another bowl, combine the oats, flour, baking soda, spices, and salt.
 - Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
 - Fold in the chocolate chips.
 - Drop spoonfuls of dough onto a prepared baking sheet.
 - Bake for 10-12 minutes or until lightly golden.
 - Let cool before serving.
 
Notes
- For chewy cookies, do not overbake them.
 - Add nuts for an extra crunch.
