- In a large bowl, combine pumpkin puree, peanut butter, maple syrup, and vanilla extract.
 - Add in pumpkin spice and rolled oats, mixing until well combined.
 - Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
 - Refrigerate for at least 30 minutes until set.
