 - 1 cup butter, softened
 - 1/2 cup pumpkin puree
 - 2 cups quick oats
 - 1 1/2 cups all-purpose flour
 - 1 teaspoon baking soda
 - 2 teaspoons pumpkin pie spice
 - 1/2 teaspoon salt
 - 1 teaspoon vanilla extract
 - 1 cup cream cheese, softened
 - 1 cup powdered sugar
 
Instructions
- Preheat your oven to 350°F (175°C).
 - In a large bowl, cream together the brown sugar, granulated sugar, and butter until smooth.
 - Add the pumpkin puree and vanilla extract, mixing until well combined.
 - In a separate bowl, combine the oats, flour, baking soda, pumpkin pie spice, and salt.
 - Gradually add the dry ingredients to the wet mixture and stir until just combined.
 - Drop tablespoonfuls of dough onto a baking sheet lined with parchment paper.
 - Bake for 10-12 minutes or until the edges are golden.
 - Allow the cookies to cool completely before frosting.
 - In a bowl, combine the cream cheese and powdered sugar to create the frosting.
 - Spread frosting on the flat side of one cookie and sandwich it with another.
 
Notes
- For a spicier flavor, feel free to add more pumpkin pie spice.
 - These cookies can be frozen for later use if needed.
