 - 1 cup granulated sugar
 - 1 cup brown sugar, packed
 - 1 cup vegetable oil
 - 4 large eggs
 - 1 cup pumpkin puree
 - 2 teaspoons vanilla extract
 
Instructions
- Preheat the oven to 350°F (175°C).
 - In a bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
 - In another bowl, mix the sugars, oil, and eggs until smooth.
 - Add the pumpkin and vanilla to the sugar mixture, then gradually incorporate the dry ingredients.
 - Drop spoonfuls of the batter onto a baking sheet lined with parchment paper.
 - Bake for 10-12 minutes or until a toothpick comes out clean.
 - Let cool before filling with cream cheese frosting.
