Delicious and easy to make, these queso chicken enchiladas are the perfect comfort food for any occasion.
Ingredients

- 2 cups cooked shredded chicken
- 1 cup queso cheese
- 1 can enchilada sauce
- 8 flour tortillas
- 1 cup diced onions
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté onions until translucent.
- Add shredded chicken, garlic powder, cumin, salt, and pepper. Mix well.
- Spread a small amount of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the chicken mixture and sprinkle queso cheese, then roll up and place seam side down in the dish.
- Pour remaining enchilada sauce over the top and sprinkle with more queso cheese.
- Bake in the preheated oven for 20-25 minutes until cheese is bubbly.
- Let it cool slightly before serving.
Notes
- For extra flavor, add chopped cilantro on top before serving.
- Pair with a side salad for a complete meal.
