Delicious and easy to make, these queso chicken enchiladas are the perfect comfort food for any occasion.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup queso cheese
  • 1 can enchilada sauce
  • 8 flour tortillas
  • 1 cup diced onions
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  3. Add shredded chicken, garlic powder, cumin, salt, and pepper. Mix well.
  4. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the chicken mixture and sprinkle queso cheese, then roll up and place seam side down in the dish.
  6. Pour remaining enchilada sauce over the top and sprinkle with more queso cheese.
  7. Bake in the preheated oven for 20-25 minutes until cheese is bubbly.
  8. Let it cool slightly before serving.

Notes

  • For extra flavor, add chopped cilantro on top before serving.
  • Pair with a side salad for a complete meal.
