Description

Roasted Carrots with Whipped Ricotta and Hot Honey combines the sweetness of carrots with creamy ricotta and a hint of spice from hot honey.


Ingredients

  • 2 pounds carrots
  • 1 cup ricotta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon hot honey
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the carrots, then cut them into even-sized pieces.
  3. Toss the carrots with olive oil, salt, and pepper.
  4. Spread the carrots on a baking sheet and roast for 25-30 minutes until tender and caramelized.
  5. While the carrots are roasting, whip the ricotta until smooth.
  6. Once the carrots are done, place them on a serving platter, dollop the whipped ricotta on top, and drizzle with hot honey.
  7. Serve warm.

  • For more heat, add extra hot honey as desired.
