Description
Roasted Carrots with Whipped Ricotta and Hot Honey combines the sweetness of carrots with creamy ricotta and a hint of spice from hot honey.
Ingredients

- 2 pounds carrots
- 1 cup ricotta cheese
- 2 tablespoons olive oil
- 1 tablespoon hot honey
- Salt to taste
- Black pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and peel the carrots, then cut them into even-sized pieces.
- Toss the carrots with olive oil, salt, and pepper.
- Spread the carrots on a baking sheet and roast for 25-30 minutes until tender and caramelized.
- While the carrots are roasting, whip the ricotta until smooth.
- Once the carrots are done, place them on a serving platter, dollop the whipped ricotta on top, and drizzle with hot honey.
- Serve warm.
Notes
- For more heat, add extra hot honey as desired.
- Pair with crusty bread for a complete meal.
