- 1 cup strawberries, hulled and halved
- 2 tablespoons honey
- 1 cup ricotta cheese
- 1 teaspoon vanilla extract
- 4 slices of your favorite bread
- 1 tablespoon olive oil
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the strawberries with honey and a pinch of salt.
- Spread the strawberries on a baking sheet and roast for 15-20 minutes, or until soft.
- Meanwhile, in a bowl, whisk together ricotta cheese and vanilla extract until creamy.
- Brush the bread slices with olive oil and toast them in the oven until golden brown.
- Spread the whipped ricotta on the toasted bread, top with the roasted strawberries, and serve immediately.
