Ingredients

  • 1 crust graham cracker pie crust
  • 1 cup heavy whipping cream
  • 1 cup root beer
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup root beer float ice cream
  • 3 tablespoons whipped cream for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine sugar, cornstarch, and salt. Gradually stir in root beer.
  3. Bring to a boil over medium heat, stirring constantly, until thickened.
  4. Remove from heat and whisk in eggs and vanilla.
  5. Pour mixture into the graham cracker crust.
  6. Bake for 20 minutes, then let it cool completely.
  7. Once cool, top with root beer float ice cream and whipped cream.
  8. Chill for at least one hour before serving.
