- 1 pound shrimp, peeled and deveined
- 1 cup long-grain rice
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 green bell pepper, chopped
- 1 teaspoon Cajun seasoning
- 2 cups chicken broth
- 1 bay leaf
- salt to taste
- black pepper to taste
Instructions
- In a skillet, heat olive oil over medium heat and sauté the onion, garlic, and bell pepper until softened.
- Add the shrimp and cook until pink.
- Stir in the rice and Cajun seasoning, mixing well.
- Pour in the chicken broth, add the bay leaf, and bring to a boil.
- Reduce heat, cover, and simmer until the rice is cooked and liquid is absorbed.
- Season with salt and pepper to taste. Remove the bay leaf before serving.
Notes
- For added spice, incorporate diced jalapeños.
- Fresh herbs like parsley can be used as garnishing.
