- 1 pound shrimp, peeled and deveined
- 4 slices turkey bacon, chopped
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
Instructions
- In a skillet, cook turkey bacon until crispy. Remove and set aside.
- In the bacon drippings, sauté onion, bell pepper, and celery until soft.
- Add garlic and cook for an additional minute.
- Stir in rice, then add chicken broth and Cajun seasoning. Bring to a boil.
- Reduce heat, cover, and simmer for about 18 minutes or until the rice is tender.
- In the last few minutes of cooking, add shrimp and cooked turkey bacon. Cook until shrimp are pink and cooked through.
- Remove from heat and let it rest for a few minutes before serving.
Notes
- This dish can be made with regular bacon as well for a richer flavor.
- Feel free to add hot sauce for extra spice.
