Ingredients

  • 1 pound shrimp, peeled and deveined
  • 4 slices turkey bacon, chopped
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil

Instructions

  1. In a skillet, cook turkey bacon until crispy. Remove and set aside.
  2. In the bacon drippings, sauté onion, bell pepper, and celery until soft.
  3. Add garlic and cook for an additional minute.
  4. Stir in rice, then add chicken broth and Cajun seasoning. Bring to a boil.
  5. Reduce heat, cover, and simmer for about 18 minutes or until the rice is tender.
  6. In the last few minutes of cooking, add shrimp and cooked turkey bacon. Cook until shrimp are pink and cooked through.
  7. Remove from heat and let it rest for a few minutes before serving.

Notes

  • This dish can be made with regular bacon as well for a richer flavor.
  • Feel free to add hot sauce for extra spice.
