Ingredients

  • 1 cup long-grain white rice
  • 1 pound shrimp, peeled and deveined
  • 4 slices turkey bacon, chopped
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil

Instructions

  1. Cook the turkey bacon in a large skillet over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add olive oil, onion, bell pepper, celery, and garlic. Sauté until vegetables are soft.
  3. Add the rice and stir to coat with the oil and vegetables.
  4. Pour in the chicken broth, Cajun seasoning, black pepper, and salt. Bring to a boil.
  5. Reduce heat, cover, and simmer for 15-20 minutes or until rice is cooked and liquid is absorbed.
  6. Stir in the shrimp and cooked turkey bacon. Cook for an additional 5 minutes until shrimp are opaque.
  7. Fluff with a fork and serve warm.

Notes

  • For added heat, include cayenne pepper to taste.
  • Substitute chicken for shrimp if desired.
