- 1 cup long-grain white rice
- 1 pound shrimp, peeled and deveined
- 4 slices turkey bacon, chopped
- 1 onion, diced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons olive oil
Instructions
- Cook the turkey bacon in a large skillet over medium heat until crispy. Remove and set aside.
- In the same skillet, add olive oil, onion, bell pepper, celery, and garlic. Sauté until vegetables are soft.
- Add the rice and stir to coat with the oil and vegetables.
- Pour in the chicken broth, Cajun seasoning, black pepper, and salt. Bring to a boil.
- Reduce heat, cover, and simmer for 15-20 minutes or until rice is cooked and liquid is absorbed.
- Stir in the shrimp and cooked turkey bacon. Cook for an additional 5 minutes until shrimp are opaque.
- Fluff with a fork and serve warm.
Notes
- For added heat, include cayenne pepper to taste.
- Substitute chicken for shrimp if desired.
