Ingredients

- 1 pound shrimp
- 1 cup grits
- 2 cups water
- 1 cup shredded cheese
- 2 potatoes, diced
- 4 slices turkey bacon
- 2 eggs
Instructions
- Cook the turkey bacon in a pan until crispy.
- Boil water and stir in the grits, cooking until thickened.
- Add cheese to grits and stir until melted.
- In another pan, sauté shrimp until pink and cooked through.
- Fry the diced potatoes until golden and tender.
- Scramble the eggs in the same pan as the shrimp.
- Serve the shrimp and eggs over the cheesy grits, topped with the crispy potatoes.
Notes
- Adjust the amount of cheese to taste.
- For more flavor, season shrimp with garlic and lemon.
