Description

A delicious combination of shrimp, grits, and cheesy eggs with the added heartiness of potatoes and turkey bacon.


Ingredients

  • 1 pound shrimp
  • 1 cup grits
  • 2 cups water
  • 1 cup shredded cheese
  • 2 potatoes, diced
  • 4 slices turkey bacon
  • 2 eggs

Instructions

  1. Cook the turkey bacon in a pan until crispy.
  2. Boil water and stir in the grits, cooking until thickened.
  3. Add cheese to grits and stir until melted.
  4. In another pan, sauté shrimp until pink and cooked through.
  5. Fry the diced potatoes until golden and tender.
  6. Scramble the eggs in the same pan as the shrimp.
  7. Serve the shrimp and eggs over the cheesy grits, topped with the crispy potatoes.

Notes

  • Adjust the amount of cheese to taste.
  • For more flavor, season shrimp with garlic and lemon.
