- 1 pound beef chuck roast
- 4 cups beef broth
- 1 teaspoon soy sauce
- 2 tablespoons miso paste
- 1 tablespoon sesame oil
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1 inch ginger, sliced
- 2 packages ramen noodles
- 1 cup bok choy, chopped
Instructions
- In a slow cooker, combine the beef chuck roast, beef broth, soy sauce, miso paste, sesame oil, green onions, garlic, and ginger.
- Cook on low for 8 hours or high for 4 hours, until the beef is tender.
- Remove the beef, shred it, and return it to the slow cooker.
- Add the ramen noodles and bok choy, and cook for an additional 10 minutes until the noodles are heated through.
Notes
- For added flavor, consider marinating the beef overnight.
