Description

A warm and hearty slow cooker chicken stew that brings comfort to the whole family.


Ingredients

  • 2 pounds chicken thighs, boneless and skinless
  • 4 cups chicken broth
  • 3 cups potatoes, diced
  • 2 cups carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place the chicken thighs at the bottom of the slow cooker.
  2. Add the diced potatoes, sliced carrots, chopped celery, chopped onion, and minced garlic over the chicken.
  3. Pour the chicken broth into the slow cooker.
  4. Sprinkle thyme, rosemary, salt, and pepper on top, and add the bay leaf.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Remove the chicken, shred it, and return it to the pot before serving.

Notes

  • For extra flavor, add a splash of white wine.
  • Serve with crusty bread.
