A warm and hearty slow cooker chicken stew that brings comfort to the whole family.
Ingredients

- 2 pounds chicken thighs, boneless and skinless
- 4 cups chicken broth
- 3 cups potatoes, diced
- 2 cups carrots, sliced
- 1 cup celery, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place the chicken thighs at the bottom of the slow cooker.
- Add the diced potatoes, sliced carrots, chopped celery, chopped onion, and minced garlic over the chicken.
- Pour the chicken broth into the slow cooker.
- Sprinkle thyme, rosemary, salt, and pepper on top, and add the bay leaf.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove the chicken, shred it, and return it to the pot before serving.
Notes
- For extra flavor, add a splash of white wine.
- Serve with crusty bread.
