Ingredients

- 2 pounds corned beef brisket
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 cups low-sodium beef broth
- 4 large carrots, chopped
- 3 medium potatoes, diced
- 1 small head of cabbage, cut into wedges
- 2 teaspoons dried thyme
- 1 teaspoon black pepper
Instructions
- Place the corned beef brisket in the slow cooker.
- Add the chopped onion and minced garlic on top.
- Pour in the beef broth and add the carrots and potatoes.
- Sprinkle thyme and black pepper over the ingredients.
- Cover and cook on low for 8 hours.
- In the last hour of cooking, add the cabbage wedges.
- Once done, slice the corned beef and serve with vegetables.
Notes
- For added flavor, you can include a bay leaf.
- Serve with crusty bread for a complete meal.
