Ingredients

  • 2 pounds corned beef brisket
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 4 large carrots, chopped
  • 3 medium potatoes, diced
  • 1 small head of cabbage, cut into wedges
  • 2 teaspoons dried thyme
  • 1 teaspoon black pepper

Instructions

  1. Place the corned beef brisket in the slow cooker.
  2. Add the chopped onion and minced garlic on top.
  3. Pour in the beef broth and add the carrots and potatoes.
  4. Sprinkle thyme and black pepper over the ingredients.
  5. Cover and cook on low for 8 hours.
  6. In the last hour of cooking, add the cabbage wedges.
  7. Once done, slice the corned beef and serve with vegetables.

Notes

  • For added flavor, you can include a bay leaf.
