Ingredients

  • 4 pounds beef short ribs
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup diced onion
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons Worcestershire sauce
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary

Instructions

  1. Season the short ribs with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat and brown the ribs on all sides.
  3. Transfer the ribs to a slow cooker.
  4. Add onion and garlic to the skillet and sauté until softened.
  5. Pour in beef broth, red wine, and Worcestershire sauce, scraping up any browned bits from the skillet.
  6. Pour the sauce over the ribs and add thyme and rosemary.
  7. Cover and cook on low for 8 hours or until the ribs are tender.
  8. Remove the ribs and strain the sauce if desired.
  9. Serve warm.
