- 4 cups mashed sweet potatoes
- 1 cup sugar
- 1/2 cup milk
- 1/2 cup melted butter
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine mashed sweet potatoes, sugar, milk, melted butter, eggs, vanilla, cinnamon, and nutmeg until smooth.
- Pour the mixture into a greased baking dish and spread evenly.
- Bake for 30 minutes.
- Remove from oven and top with mini marshmallows.
- Return to oven and bake for another 10 minutes until marshmallows are golden brown.
Notes
- For extra flavor, add a pinch of salt to the sweet potato mixture.
- Use freshly mashed sweet potatoes for the best texture.
