Delicious and easy to prepare, this Spinach and Feta Stuffed Chicken Breast is perfect for a weeknight meal.
Ingredients

- 4 chicken breasts
- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté garlic and spinach until wilted.
- Remove from heat and mix in feta cheese and Italian seasoning.
- Cut a pocket into each chicken breast and stuff with the spinach mixture.
- Season the outside of the chicken with salt and pepper.
- Place the stuffed chicken in a baking dish and bake for 25-30 minutes.
- Let rest for a few minutes before serving.
Notes
- For extra flavor, marinate the chicken in lemon juice for an hour before cooking.
