Description

Delicious and easy to prepare, this Spinach and Feta Stuffed Chicken Breast is perfect for a weeknight meal.


Ingredients

Scale
  • 4 chicken breasts
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté garlic and spinach until wilted.
  3. Remove from heat and mix in feta cheese and Italian seasoning.
  4. Cut a pocket into each chicken breast and stuff with the spinach mixture.
  5. Season the outside of the chicken with salt and pepper.
  6. Place the stuffed chicken in a baking dish and bake for 25-30 minutes.
  7. Let rest for a few minutes before serving.

Notes

  • For extra flavor, marinate the chicken in lemon juice for an hour before cooking.
