- 3 cups fresh spinach
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a skillet over medium heat. Add garlic and sauté until fragrant.
- Add sun-dried tomatoes and cook for another 2-3 minutes.
- Pour in the heavy cream and bring to a simmer.
- Add the spinach and cook until wilted.
- Stir in Parmesan cheese, salt, and black pepper. Mix well.
- Serve warm over pasta or as a side dish.
