Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium-high heat.
  2. Season the beef chuck roast with salt and pepper, then sear it in the pot until browned on all sides.
  3. Add the chopped onion, carrots, celery, and garlic to the pot, sauté for a few minutes.
  4. Pour in the red wine, scraping the bottom of the pot to release any browned bits.
  5. Add the beef broth, rosemary, and thyme; bring to a simmer.
  6. Cover the pot and reduce the heat to low, cooking for about 3-4 hours or until the meat is tender.
  7. Remove the meat, slice, and serve with the vegetables and sauce.

Notes

  • For enhanced flavor, marinate the beef overnight.
