- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract

- 1 cup diced strawberries
- 1/2 cup crushed pineapple, drained
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla and milk, then gradually mix in the flour mixture.
- Fold in strawberries and pineapple gently.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For extra flavor, add a splash of pineapple juice to the batter.
- Serving with whipped cream enhances the summer delight.
