Ingredients

  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1/2 cup chopped bell pepper
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 egg
  • 2 cloves minced garlic
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine grated zucchini, grated carrots, chopped bell pepper, breadcrumbs, parmesan, egg, minced garlic, salt, and pepper.
  3. Mix until well combined.
  4. Form the mixture into small balls and place them on a baking sheet.
  5. Bake for 25 minutes, or until golden brown.
