Ingredients

- 1 cup grated zucchini
- 1 cup grated carrots
- 1/2 cup chopped bell pepper
- 1/2 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 egg
- 2 cloves minced garlic
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a mixing bowl, combine grated zucchini, grated carrots, chopped bell pepper, breadcrumbs, parmesan, egg, minced garlic, salt, and pepper.
- Mix until well combined.
- Form the mixture into small balls and place them on a baking sheet.
- Bake for 25 minutes, or until golden brown.

- Serve with a dipping sauce for added flavor.
