- 2 slices bread
- 1/4 cup sun-dried tomatoes
- 1/2 cup fresh spinach
- 1/2 cup ricotta cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat a skillet over medium heat.
- Spread ricotta cheese on one side of each slice of bread.
- Layer spinach and sun-dried tomatoes over one slice.
- Top with the other slice of bread, cheese side down.
- Drizzle olive oil in the skillet and place the sandwich in.
- Cook until golden brown on both sides and the cheese is melted.
Notes
- Feel free to add other ingredients like mozzarella for extra creaminess.
- For a vegan option, substitute ricotta with tofu or a vegan cream cheese.
