- 1 cup sweet potato puree
- 1 package cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 large eggs
- 1 package mini pie crusts
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, beat together the cream cheese, granulated sugar, and brown sugar until smooth.
- Add in the sweet potato puree, vanilla extract, cinnamon, and nutmeg; mix until well combined.
- In a separate bowl, beat the eggs and then gradually add them to the sweet potato mixture.
- Pour the mixture into the mini pie crusts.
- Bake for 25-30 minutes or until set.
- Let cool before serving.
