Description

A delicious and easy appetizer that features sweet potatoes topped with creamy brie cheese.


Ingredients

  • 2 large sweet potatoes
  • 8 ounces brie cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into 1/4 inch rounds.
  3. Brush both sides of the sweet potato rounds with olive oil and sprinkle with salt and pepper.
  4. Place the sweet potato rounds on a baking sheet and bake for 20-25 minutes until tender.
  5. Once cooked, top each round with a piece of brie cheese.
  6. Return to the oven for 5-7 minutes until the brie has melted.
  7. Remove from the oven and garnish with fresh rosemary before serving.
