A delicious and easy appetizer that features sweet potatoes topped with creamy brie cheese.
Ingredients

- 2 large sweet potatoes
- 8 ounces brie cheese
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into 1/4 inch rounds.
- Brush both sides of the sweet potato rounds with olive oil and sprinkle with salt and pepper.
- Place the sweet potato rounds on a baking sheet and bake for 20-25 minutes until tender.
- Once cooked, top each round with a piece of brie cheese.
- Return to the oven for 5-7 minutes until the brie has melted.
- Remove from the oven and garnish with fresh rosemary before serving.
Notes
- For extra flavor, consider adding a drizzle of honey on top of the brie.
- Feel free to experiment with different toppings like nuts or other herbs.
