Description

A delicious and guilt-free twist on loaded baked potatoes, featuring turkey bacon, black beans, cheese, and fresh toppings.


Ingredients

  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 cup Greek yogurt
  • 1 avocado, diced
  • 1 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the russet potatoes, then poke holes in them with a fork.
  3. Bake the potatoes for 45-60 minutes until tender.
  4. While the potatoes are baking, cook the turkey bacon in a skillet until crispy. Remove and chop into pieces.
  5. In a large bowl, combine the black beans, chopped turkey bacon, taco seasoning, salt, and pepper.
  6. When the potatoes are done, let them cool slightly, then cut them open and fluff the inside with a fork.
  7. Top each potato with the black bean mixture, cheddar cheese, Greek yogurt, diced avocado, tomatoes, and cilantro.
  8. Serve immediately and enjoy your guilt-free indulgence!
