- 4 large russet potatoes
- 6 slices turkey bacon
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1/2 cup Greek yogurt
- 1 avocado, diced
- 1 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1 teaspoon taco seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and dry the russet potatoes, then poke holes in them with a fork.
- Bake the potatoes for 45-60 minutes until tender.
- While the potatoes are baking, cook the turkey bacon in a skillet until crispy. Remove and chop into pieces.
- In a large bowl, combine the black beans, chopped turkey bacon, taco seasoning, salt, and pepper.
- When the potatoes are done, let them cool slightly, then cut them open and fluff the inside with a fork.
- Top each potato with the black bean mixture, cheddar cheese, Greek yogurt, diced avocado, tomatoes, and cilantro.
- Serve immediately and enjoy your guilt-free indulgence!
