Ingredients

  • 4 large russet potatoes
  • 1 pound ground turkey
  • 6 slices turkey bacon
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1 cup sour cream
  • 1 tablespoon taco seasoning
  • 2 tablespoons olive oil
  • 2 green onions, chopped
  • 1 avocado, diced

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub the potatoes and poke holes in them with a fork.
  2. Rub the potatoes with olive oil and sprinkle with salt. Bake for 45-60 minutes until tender.
  3. In a skillet, cook the turkey bacon until crispy, then chop. In the same skillet, add ground turkey and taco seasoning, cooking until browned.
  4. Once potatoes are cooked, slice them open and fluff the insides with a fork.
  5. Top with ground turkey, chopped turkey bacon, cheese, tomatoes, sour cream, green onions, and avocado.
  6. Serve immediately and enjoy!
