- 4 large russet potatoes
- 1 pound ground turkey
- 6 slices turkey bacon
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1 cup sour cream
- 1 tablespoon taco seasoning
- 2 tablespoons olive oil
- 2 green onions, chopped
- 1 avocado, diced
Instructions
- Preheat the oven to 400°F (200°C). Scrub the potatoes and poke holes in them with a fork.
- Rub the potatoes with olive oil and sprinkle with salt. Bake for 45-60 minutes until tender.
- In a skillet, cook the turkey bacon until crispy, then chop. In the same skillet, add ground turkey and taco seasoning, cooking until browned.
- Once potatoes are cooked, slice them open and fluff the insides with a fork.
- Top with ground turkey, chopped turkey bacon, cheese, tomatoes, sour cream, green onions, and avocado.
- Serve immediately and enjoy!
