Ingredients

  • 1 pound chicken breasts, diced
  • 1 can (14 ounces) coconut milk
  • 4 cups chicken broth
  • 2 cups egg noodles
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 lime, juiced
  • 1 cup fresh cilantro, chopped
  • 1 cup bean sprouts
  • 2 green onions, sliced

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the diced chicken and cook until browned.
  2. Stir in the red curry paste and cook for another minute until fragrant.
  3. Add the coconut milk and chicken broth, bring to a simmer.
  4. Add the egg noodles and cook according to package instructions.
  5. Stir in the fish sauce, sugar, and lime juice.
