- 1 pound chicken breasts, diced
- 1 can (14 ounces) coconut milk
- 4 cups chicken broth
- 2 cups egg noodles
- 2 tablespoons red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1 lime, juiced
- 1 cup fresh cilantro, chopped
- 1 cup bean sprouts
- 2 green onions, sliced
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the diced chicken and cook until browned.
- Stir in the red curry paste and cook for another minute until fragrant.
- Add the coconut milk and chicken broth, bring to a simmer.
- Add the egg noodles and cook according to package instructions.
- Stir in the fish sauce, sugar, and lime juice.
- Remove from heat and stir in the cilantro, bean sprouts, and green onions.
- Serve hot and enjoy!
Notes
- For a spicier soup, add more red curry paste.
- Top with extra lime juice for a tangier flavor.
