- Whipped cream (for topping)
Instructions
- In a saucepan, whisk together coconut milk, heavy cream, sugar, and cornstarch over medium heat until thickened.
- In a separate bowl, whisk egg yolks and vanilla extract, then gradually stir in a little of the hot mixture to temper the yolks.
- Combine the tempered yolks with the hot mixture and cook until it bubbles.
- Remove from heat and stir in shredded coconut.
- Pour the filling into the pre-baked pie crust and chill until set.
- Top with whipped cream before serving.
