  • 3 large egg yolks

  • 1 cup shredded coconut
  • Whipped cream (for topping)

Instructions

  1. In a saucepan, whisk together coconut milk, heavy cream, sugar, and cornstarch over medium heat until thickened.
  2. In a separate bowl, whisk egg yolks and vanilla extract, then gradually stir in a little of the hot mixture to temper the yolks.
  3. Combine the tempered yolks with the hot mixture and cook until it bubbles.
  4. Remove from heat and stir in shredded coconut.
