- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup espresso, cooled
- 2 tablespoons coffee liqueur (optional)
- 20 ladyfinger cookies
- 2 tablespoons cocoa powder
Instructions
- In a large bowl, whip the heavy cream with sugar and vanilla extract until stiff peaks form.
- In another bowl, gently fold in the mascarpone cheese into the whipped cream until smooth.
- In a shallow dish, combine cooled espresso and coffee liqueur. Dip each ladyfinger briefly into the mixture.
- Layer a few dipped ladyfingers in the bottom of serving cups.
- Add a layer of the mascarpone mixture over the ladyfingers.
- Repeat layers until cups are filled, finishing with the mascarpone layer on top.
- Chill the parfait cups in the refrigerator for at least 4 hours.
- Before serving, dust the top with cocoa powder.
Notes
- For a stronger coffee flavor, use more coffee liqueur.
- Letting the parfaits chill longer enhances the flavor.
