Description

Ingredients

  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup espresso, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 20 ladyfinger cookies
  • 2 tablespoons cocoa powder

Instructions

  1. In a large bowl, whip the heavy cream with sugar and vanilla extract until stiff peaks form.
  2. In another bowl, gently fold in the mascarpone cheese into the whipped cream until smooth.
  3. In a shallow dish, combine cooled espresso and coffee liqueur. Dip each ladyfinger briefly into the mixture.
  4. Layer a few dipped ladyfingers in the bottom of serving cups.
  5. Add a layer of the mascarpone mixture over the ladyfingers.
  6. Repeat layers until cups are filled, finishing with the mascarpone layer on top.
  7. Chill the parfait cups in the refrigerator for at least 4 hours.
  8. Before serving, dust the top with cocoa powder.

Notes

  • For a stronger coffee flavor, use more coffee liqueur.
  • Letting the parfaits chill longer enhances the flavor.
