Description

A traditional dish that has been loved for generations, Sauerbraten is a marinated pot roast that brings families together around the dinner table.


Ingredients

  • 3 pounds beef roast
  • 1 cup vinegar
  • 1 cup water
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 1 teaspoon black peppercorns
  • 2 bay leaves
  • 1 onion, chopped
  • 2 carrots, chopped
  • 1 celery stalk, chopped
  • 2 tablespoons vegetable oil
  • 1 cup beef broth
  • 2 tablespoons cornstarch

Instructions

  1. In a large bowl, combine vinegar, water, sugar, salt, peppercorns, bay leaves, onion, carrots, and celery. Stir to create a marinade.
  2. Place the beef roast in a resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 3 days.
  3. Preheat the oven to 325°F (165°C).
  4. Remove the roast from the marinade and pat dry. Reserve the marinade for later use.
  5. In a Dutch oven, heat vegetable oil over medium-high heat. Brown the roast on all sides.
  6. Pour the reserved marinade and beef broth over the roast. Cover and place in the oven.
  7. Roast for about 3 hours or until tender.
  8. Once done, remove the roast and let it rest. Thicken the cooking liquid with cornstarch if desired.
  9. Slice the roast and serve with the sauce.

Notes

  • For best flavor, marinate the beef for several days.
  • Serve with red cabbage and potato dumplings for a traditional side dish.
