Description
A traditional dish that has been loved for generations, Sauerbraten is a marinated pot roast that brings families together around the dinner table.
Ingredients

- 3 pounds beef roast
- 1 cup vinegar
- 1 cup water
- 2 tablespoons sugar
- 1 tablespoon salt
- 1 teaspoon black peppercorns
- 2 bay leaves
- 1 onion, chopped
- 2 carrots, chopped
- 1 celery stalk, chopped
- 2 tablespoons vegetable oil
- 1 cup beef broth
- 2 tablespoons cornstarch
Instructions
- In a large bowl, combine vinegar, water, sugar, salt, peppercorns, bay leaves, onion, carrots, and celery. Stir to create a marinade.
- Place the beef roast in a resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 3 days.
- Preheat the oven to 325°F (165°C).
- Remove the roast from the marinade and pat dry. Reserve the marinade for later use.
- In a Dutch oven, heat vegetable oil over medium-high heat. Brown the roast on all sides.
- Pour the reserved marinade and beef broth over the roast. Cover and place in the oven.
- Roast for about 3 hours or until tender.
- Once done, remove the roast and let it rest. Thicken the cooking liquid with cornstarch if desired.
- Slice the roast and serve with the sauce.
Notes
- For best flavor, marinate the beef for several days.
- Serve with red cabbage and potato dumplings for a traditional side dish.
