- 4 salmon fillets
- 2 tablespoons garlic, minced
- 1/4 cup unsalted butter
- 1 pound baby potatoes
- 1/2 cup grated Parmesan cheese
- 1 bunch asparagus
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Boil the baby potatoes in salted water until tender, about 15 minutes. Drain and let them cool slightly.
- In a large oven-safe skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute.
- Season the salmon fillets with salt and pepper and place them in the skillet. Cook for 4-5 minutes on each side.
- While salmon cooks, toss the baby potatoes in olive oil, salt, and pepper, then add them to the skillet with the salmon.
- Transfer the skillet to the oven and roast for 10-15 minutes until the salmon is flaky.
- Add the asparagus to the skillet, sprinkle with Parmesan cheese, and return to the oven for an additional 5 minutes.
- Serve hot and enjoy!
Notes
- For a spicy kick, add red pepper flakes to the garlic butter.
- Use fresh herbs like parsley or dill for garnish.
