Ingredients

- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup shredded carrots
- 2 cups shredded sharp cheddar cheese
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place broccoli, onion, garlic, vegetable broth, and carrots in the slow cooker.
- Cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
- Purée the mixture using an immersion blender until smooth.
- Stir in cheese and heavy cream, mixing well until cheese melts.
- Season with salt and pepper to taste.

- For extra creaminess, add more cheese or cream.
