Ingredients

  • 3 medium beets
  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and trim the beets, then wrap each in aluminum foil.
  3. Roast the beets in the oven for about 45 minutes or until tender.
  4. In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
  5. Once the beets are done, let them cool, then peel and cut into wedges.
  6. In a bowl, toss the beet wedges with olive oil, salt, black pepper, and rosemary.
