- 3 medium beets
- 4 slices turkey bacon
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and trim the beets, then wrap each in aluminum foil.
- Roast the beets in the oven for about 45 minutes or until tender.
- In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
- Once the beets are done, let them cool, then peel and cut into wedges.
- In a bowl, toss the beet wedges with olive oil, salt, black pepper, and rosemary.
