Ingredients

- 2 cups chicken, cooked and shredded
- 1 cup poblano peppers, diced
- 1 cup corn, frozen
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can coconut milk
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Stir in diced poblano peppers, corn, cumin, and chili powder, cooking for 5 minutes.
- Add chicken broth and bring to a boil.
- Reduce heat and mix in shredded chicken and coconut milk.
- Simmer for 15 minutes, seasoning with salt and black pepper.
- Serve warm, garnished with fresh cilantro if desired.

- For extra creaminess, blend a portion of the soup before serving.
