- 4 bell peppers
- 2 cups shredded cooked chicken
- 1 can (15 oz) white beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes with green chilies
- 1 tsp chili powder
- 1 tsp cumin
- 1 cup shredded cheese
- 1/2 cup chopped cilantro
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a bowl, mix the chicken, beans, corn, diced tomatoes, chili powder, cumin, and half the cheese.
- Stuff the mixture into the bell peppers and place in a baking dish.
- Sprinkle the remaining cheese on top.
- Bake for 25-30 minutes until the peppers are tender and cheese is melted.
Notes
- For added spice, include jalapeños in the filling.
- These can be made ahead and stored in the refrigerator before baking.
