White Chicken Chili Stuffed Peppers are a delicious blend of flavors, perfect for a cozy night in.


Ingredients

  • 4 bell peppers
  • 2 cups shredded cooked chicken
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes with green chilies
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 cup shredded cheese
  • 1/2 cup chopped cilantro

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a bowl, mix the chicken, beans, corn, diced tomatoes, chili powder, cumin, and half the cheese.
  4. Stuff the mixture into the bell peppers and place in a baking dish.
  5. Sprinkle the remaining cheese on top.
  6. Bake for 25-30 minutes until the peppers are tender and cheese is melted.

Notes

  • For added spice, include jalapeños in the filling.
  • These can be made ahead and stored in the refrigerator before baking.
