Ingredients

  • 1 pound boneless, skinless chicken breast
  • 4 slices turkey bacon
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup chicken broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 1 cup corn, frozen or fresh
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. In the same pot, add diced onion and minced garlic; sauté until translucent.
  3. Add chicken breast and cook until golden brown.
  4. Pour in chicken broth and add white beans, corn, cumin, oregano, chili powder, salt, and pepper.
  5. Simmer for 20 minutes, till chicken is cooked through.
  6. Remove chicken, shred it, and return to pot.
  7. Stir in sour cream and crumbled bacon, and heat for a few minutes.
  8. Garnish with cilantro before serving.

Notes

  • This chili can be made in advance and tastes even better the next day.
  • Feel free to adjust the spices according to your taste.
