- 1 pound boneless, skinless chicken breast
- 4 slices turkey bacon
- 1 can (15 oz) white beans, drained and rinsed
- 1 cup chicken broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon chili powder
- 1 cup corn, frozen or fresh
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- In a large pot, cook turkey bacon until crispy. Remove and crumble.
- In the same pot, add diced onion and minced garlic; sauté until translucent.
- Add chicken breast and cook until golden brown.
- Pour in chicken broth and add white beans, corn, cumin, oregano, chili powder, salt, and pepper.
- Simmer for 20 minutes, till chicken is cooked through.
- Remove chicken, shred it, and return to pot.
- Stir in sour cream and crumbled bacon, and heat for a few minutes.
- Garnish with cilantro before serving.
Notes
- This chili can be made in advance and tastes even better the next day.
