- 4 medium zucchinis
- 8 ounces turkey bacon
- 1 cup diced onions
- 2 cloves garlic, minced
- 1 cup shredded cheese
- 1 teaspoon Italian seasoning
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the seeds, creating a boat.
- In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
- In the same skillet, sauté onions and garlic until softened.
- Add the turkey bacon, cheese, and Italian seasoning. Mix well.
- Fill each zucchini boat with the mixture.
- Place in a baking dish and bake for 25-30 minutes.
- Serve warm and enjoy!
Notes
- Feel free to add other vegetables to the stuffing, like bell peppers or mushrooms.
- For a vegetarian option, replace turkey bacon with your favorite meat substitute.
