- 1 lb lean ground beef
- 8 medium flour tortillas
- 1 can refried beans
- 1 cup salsa (your favorite brand or homemade)
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 packet taco seasoning
- 1 small chopped onion
- 2 cloves minced garlic
- Sour cream (for topping)
- Chopped cilantro (for garnish)
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Add chopped onions and garlic; sauté until soft.
- Stir in taco seasoning and 1/4 cup of water. Let simmer until the mixture thickens.
- Spread a thin layer of salsa on the bottom of a 9×13-inch casserole dish.
- Layer 2 tortillas to cover the base, spread half the refried beans, half the beef mixture, and a handful of shredded cheese.
- Repeat the layers with tortillas, beans, beef, and cheese.
- Top with the final tortillas, remaining salsa, and a generous sprinkle of cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden.
- Let cool slightly, garnish with cilantro, and serve with sour cream if desired.
Notes
- Add jalapeños between layers for extra spice.
- Mix in smoked paprika or chipotle powder with the beef for deeper flavor.
- Try blending mozzarella or pepper jack cheese for a unique melt.
- Don’t overfill layers to maintain structure.
