Description

A comforting, easy-to-make baked burrito casserole layered with seasoned ground beef, refried beans, cheese, and tortillas. Perfect for family dinners or meal prep.


Ingredients

  • 1 lb lean ground beef
  • 8 medium flour tortillas
  • 1 can refried beans
  • 1 cup salsa (your favorite brand or homemade)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 packet taco seasoning
  • 1 small chopped onion
  • 2 cloves minced garlic
  • Sour cream (for topping)
  • Chopped cilantro (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Add chopped onions and garlic; sauté until soft.
  3. Stir in taco seasoning and 1/4 cup of water. Let simmer until the mixture thickens.
  4. Spread a thin layer of salsa on the bottom of a 9×13-inch casserole dish.
  5. Layer 2 tortillas to cover the base, spread half the refried beans, half the beef mixture, and a handful of shredded cheese.
  6. Repeat the layers with tortillas, beans, beef, and cheese.
  7. Top with the final tortillas, remaining salsa, and a generous sprinkle of cheese.
  8. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden.
  9. Let cool slightly, garnish with cilantro, and serve with sour cream if desired.

  • Add jalapeños between layers for extra spice.
  • Mix in smoked paprika or chipotle powder with the beef for deeper flavor.
