- 8 ounces small shell pasta
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 cup beef broth
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the diced onion and minced garlic, cooking until the onion is translucent.
- Stir in the diced tomatoes, beef broth, and season with salt and pepper. Bring to a simmer.
- Meanwhile, cook the shell pasta according to package instructions until al dente. Drain.
- Once the beef mixture has simmered for about 10 minutes, reduce heat to low and stir in the sour cream and cheddar cheese until melted and creamy.
- Add the cooked pasta to the beef mixture and stir to combine. Heat for a few more minutes before serving.
