  • 8 ounces small shell pasta
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup beef broth
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the diced tomatoes, beef broth, and season with salt and pepper. Bring to a simmer.
  4. Meanwhile, cook the shell pasta according to package instructions until al dente. Drain.
  5. Once the beef mixture has simmered for about 10 minutes, reduce heat to low and stir in the sour cream and cheddar cheese until melted and creamy.
